Using shallots and red wine vinegar gives this dressing a lovely light pink color. Onions in a dressing can be quite overpowering, but when paired with sweet berries in the salad, everything balances perfectly together.
Pink Poppy Seed Dressing
- 3 shallots or ¼ small red onion frozen & thawed
- 1 Tbsp sugar
- 2 Tbsp red wine vinegar
- ¼ tsp mustard powder
- ¼ tsp salt
- 4 Tbsp oil
- 1/8 tsp celery seed
- ½ tsp poppy seeds
- Add shallots, sugar, vinegar, mustard and salt to a blender and process until smooth.
- With the machine running slowly drizzle in the oil until emulsified.
- Stir in remaining seeds.
-Freezing the onion does two things: greatly reduces its strong raw flavor and allows it to be pureed completely smooth.
