shallots or ¼ small red onion
frozen & thawed

sugar

red wine vinegar

mustard powder
¼
tsp
salt

oil

celery seed

poppy seeds
Instructions
Add shallots, sugar, vinegar, mustard and salt to a blender and process until smooth.
With the machine running slowly drizzle in the oil until emulsified.
Stir in remaining seeds.
Notes
Makes about 1/2 cup
-Freezing the onion does two things: greatly reduces its strong raw flavor and allows it to be pureed completely smooth.
