Pink Poppy Seed Dressing

Ingredients
  

  • 3 shallots or ¼ small red onion frozen & thawed
  • 1 Tbsp sugar
  • 2 Tbsp red wine vinegar
  • ¼ tsp mustard powder
  • ¼ tsp salt
  • 4 Tbsp oil
  • 1/8 tsp celery seed
  • ½ tsp poppy seeds

Instructions
 

  • Add shallots, sugar, vinegar, mustard and salt to a blender and process until smooth.
  • With the machine running slowly drizzle in the oil until emulsified.
  • Stir in remaining seeds.

Notes

Makes about 1/2 cup
-Freezing the onion does two things: greatly reduces its strong raw flavor and allows it to be pureed completely smooth.
