Asian Cucumbers
For a little something different, try infusing some sliced cucumbers with some traditional Asian flavors like soy sauce and sesame oil.
Sprinkle chopped cucumber with salt, place in colander, and let sit for 10 minutes (to remove water from the cucumber). Whisk together remaining ingredients, then toss with cucumbers (can rinse if desired). Allow to marinate for at least 30 minutes before serving.

Ingredients
- 1 English cucumber chopped
- 1 tsp salt
- 1 Tbsp rice vinegar
- 2 tsp sugar omit for low carb
- 2 tsp GF soy sauce
- ½ tsp sesame oil
- 2 sliced green onions
- 1 garlic clove minced
- Pinch red pepper flakes
- 2 Tbsp cilantro
