Mesquite flour gives these brownies a wonderful flavor with notes of gingerbread.

Ingredients
  

  • cup dates chopped
  • 1 cup boiling water
  • 1/2 tsp baking soda
  • 1/3 cup dark chocolate chopped
  • 2 eggs
  • 1/4 cup oil
  • 2/3 cup liquid honey
  • 1 tsp vanilla
  • 1/4 cup cocoa
  • 2 Tbsp arrowroot starch
  • 2 Tbsp mesquite flour
  • 1/3 cup coconut flour
  • 2/3 cup chickpea flour
  • 1/4 cup ground flax seed
  • 1/2 cup chopped pecans or walnuts optional
  • 1 tsp baking powder
  • 1 tsp xanthan gum
  • 1 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp chilli powder

Instructions
 

  • Place dates, baking soda and chopped chocolate in a glass or metal bowl, pour boiling water over all and cover bowl with a plate to retain heat then set aside.
  • In a food processor or bowl of stand mixer beat eggs, oil, and honey.
  • In a separate bowl blend all of the dry ingredients.
  • Add the date mixture to the egg mixture along with the vanilla in the food processor and blend until smooth.
  • Add dry ingredients to the food processor all at once (including nuts if using) and blend until all incorporated, it will become very thick.
  • Pour batter into a greased 9 inch square baking plan, and bake at 350°F for approximately 30 minutes or until an inserted toothpick comes out clean.

Notes

Mesquite flour is made from the bean pods of the mesquite tree. It is higher in protein than most conventional grain flours, and has a sweet, earthy taste with notes of cinnamon, molasses, and caramel.
