Rocky Road Brownies
Who can resist chocolate, marshmallows and brownies?
Ingredients
Base:
- 2 cups sugar
- 1 cup butter or margarine
- 1/4 cup cocoa
- 4 eggs
- 1 tsp vanilla
- 1 1/2 cups GF Flour Blend
- 1 tsp xanthan gum
- 1 1/2 cup shredded coconut
- 1 cup pecans chopped
Filling:
- 1 jar GF marshmallow cream
Topping:
- 1/2 cup butter or margarine
- 1/2 cup condensed milk
- 1 tsp vanilla
- 1/2 cup cocoa
- 1 cup icing sugar
Instructions
- Base: Cream together butter and sugar. Then add eggs, one at a time, then cocoa and vanilla. Add flour and beat for 1 minute, then fold in coconut and pecans. Pour into a 9x13 greased pan, and bake at 350°F for 30-35 minutes or until done.
- Filling: allow cake to cool for at least 10 minutes, then spread marshmallow cream. Be careful as cake will rip (allow warm cake to help melt the marshmallow so it spreads easier).
- Topping: in a saucepan melt butter, then add cocoa and milk. Bring to a boil, and remove from heat. Add vanilla and icing sugar, and beat until smooth, then spread over marshmallow layer.
