Salmon Kedgeree
Kedgeree is a traditional 19th century British breakfast meal consisting of flaked fish, rice and spices.
Ingredients
- 2 tsp olive oil
- 1 cup onion finely chopped
- 2 cloves garlic crushed
- 1 tsp turmeric
- 1 tsp GF curry powder
- 3/4 cup long grain rice
- 1 cup red pepper sliced
- 2 cups GF vegetable stock
- 1 cup canned salmon drained
- 4 hard-boiled eggs quartered
- 1/2 cup fresh parsley chopped
- 1/4 tsp pepper
Instructions
- Heat the olive oil in a non-stick frying pan and gently fry the onion for a few minutes until it softens. Add the garlic, turmeric and curry powder and cook for one minute.
- Add the rice, capsicum and vegetable stock. Bring to a boil and then simmer, covered, for 12 minutes or until the rice is cooked.
- Add the salmon and eggs and gently fold them through the mixture. then stir in the parsley and add pepper.
