Kedgeree is a traditional 19th century British breakfast meal consisting of flaked fish, rice and spices.
Ingredients
  • 2 tsp olive oil
  • 1 cup onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tsp turmeric
  • 1 tsp GF curry powder
  • ¾ cup long grain rice
  • 1 cup red pepper, sliced
  • 2 cups GF vegetable stock
  • 1 cup canned salmon, drained
  • 4 hard-boiled eggs, quartered
  • ½ cup fresh parsley, chopped
  • ¼ tsp pepper
Instructions
  1. Heat the olive oil in a non-stick frying pan and gently fry the onion for a few minutes until it softens. Add the garlic, turmeric and curry powder and cook for one minute.
  2. Add the rice, capsicum and vegetable stock. Bring to a boil and then simmer, covered, for 12 minutes or until the rice is cooked.
  3. Add the salmon and eggs and gently fold them through the mixture. then stir in the parsley and add pepper.
