Kedgeree is a traditional 19th century British breakfast meal consisting of flaked fish, rice and spices.

Ingredients
  

  • 2 tsp olive oil
  • 1 cup onion finely chopped
  • 2 cloves garlic crushed
  • 1 tsp turmeric
  • 1 tsp GF curry powder
  • 3/4 cup long grain rice
  • 1 cup red pepper sliced
  • 2 cups GF vegetable stock
  • 1 cup canned salmon drained
  • 4 hard-boiled eggs quartered
  • 1/2 cup fresh parsley chopped
  • 1/4 tsp pepper

Instructions
 

  • Heat the olive oil in a non-stick frying pan and gently fry the onion for a few minutes until it softens. Add the garlic, turmeric and curry powder and cook for one minute.
  • Add the rice, capsicum and vegetable stock. Bring to a boil and then simmer, covered, for 12 minutes or until the rice is cooked.
  • Add the salmon and eggs and gently fold them through the mixture. then stir in the parsley and add pepper.
