Delightful pancakes with a strawberry sauce.
  • 2 eggs
  • 1⅓ cups water
  • ¾ cup brown rice flour
  • ½ cup white rice flour
  • ½ cup potato starch
  • ½ cup bean flour
  • 1 Tbsp sugar
  • ½ tsp salt
Strawberry Sauce:
  • 1 Tbsp butter or margarine
  • 1 Tbsp sugar
  • ¼ cup strawberry jam
  • 1½ tsp arrowroot
  • ½ cup water
  1. Mix brown rice flour, white rice flour, potato starch, bean flour, sugar and salt. Add water and stir until it's smooth. Keep this refrigerated for about 2-3 hours.
  2. Beat eggs and add to the mix. Then pour into a hot greased griddle.
  3. Strawberry Sauce: Mix margarine, sugar and strawberry jam. Microwave for 2-3 minutes on medium, until melted. Mix arrowroot flour with water and blend till smooth. Thoroughly mix strawberry into the blend. Microwave again for 1-2 minutes on medium, until it's thickened. Stir every 20 seconds to avoid lumps.
  4. Serve on pancakes.
