Salmon & Basil Frittata

Try something different with this seafood inspired frittata. Chopped tomatoes, fresh basil and red pepper are just a few of the ingredients in this light and satisfying dish.

A frittata is a classic Italian dish that is great for brunch, lunch, or even dinner. It’s wonderful when paired with a classic Italian salad or bowl of minestrone soup.
  • 4 eggs, beaten slightly
  • 6 oz canned salmon, drained
  • 1½ cups frozen corn
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 1 red pepper, chopped
  • 2 Tbsp fresh basil, chopped
  • Salt and pepper to taste
  • 1 tsp olive oil
  1. Heat olive oil on medium in a heavy skillet. Add onion and sauté until onions soften a little. Add the corn, salmon, tomato, and red pepper. Stir with a wooden spoon a few times, being careful not to break apart the salmon too much.
  2. Season with salt and pepper. Stir in the eggs. Add fresh basil. Lower the heat to the lowest setting and cook for 10-12 minutes, or until the eggs are cooked all the way through.
