Salmon & Basil Frittata
Try something different with this seafood inspired frittata. Chopped tomatoes, fresh basil and red pepper are just a few of the ingredients in this light and satisfying dish.
Salmon & Basil Frittata
A frittata is a classic Italian dish that is great for brunch, lunch, or even dinner. It’s wonderful when paired with a classic Italian salad or bowl of minestrone soup.
Ingredients
- 4 eggs beaten slightly
- 6 oz canned salmon drained
- 1 1/2 cups frozen corn
- 1 onion sliced
- 2 to matoes chopped
- 1 red pepper chopped
- 2 Tbsp fresh basil chopped
- Salt and pepper to taste
- 1 tsp olive oil
Instructions
- Heat olive oil on medium in a heavy skillet. Add onion and sauté until onions soften a little. Add the corn, salmon, tomato, and red pepper. Stir with a wooden spoon a few times, being careful not to break apart the salmon too much.
- Season with salt and pepper. Stir in the eggs. Add fresh basil. Lower the heat to the lowest setting and cook for 10-12 minutes, or until the eggs are cooked all the way through.
