Salmon & Basil Frittata

A frittata is a classic Italian dish that is great for brunch, lunch, or even dinner. It’s wonderful when paired with a classic Italian salad or bowl of minestrone soup.

- 4 eggs beaten slightly
- 6 oz canned salmon drained
- 1 1/2 cups frozen corn
- 1 onion sliced
- 2 to matoes chopped
- 1 red pepper chopped
- 2 Tbsp fresh basil chopped
- Salt and pepper to taste
- 1 tsp olive oil
Heat olive oil on medium in a heavy skillet. Add onion and sauté until onions soften a little. Add the corn, salmon, tomato, and red pepper. Stir with a wooden spoon a few times, being careful not to break apart the salmon too much.
Season with salt and pepper. Stir in the eggs. Add fresh basil. Lower the heat to the lowest setting and cook for 10-12 minutes, or until the eggs are cooked all the way through.
