Salmon & Basil Frittata

A frittata is a classic Italian dish that is great for brunch, lunch, or even dinner. It’s wonderful when paired with a classic Italian salad or bowl of minestrone soup.

Ingredients
  

  • 4 eggs beaten slightly
  • 6 oz canned salmon drained
  • 1 1/2 cups frozen corn
  • 1 onion sliced
  • 2 to matoes chopped
  • 1 red pepper chopped
  • 2 Tbsp fresh basil chopped
  • Salt and pepper to taste
  • 1 tsp olive oil

Instructions
 

  • Heat olive oil on medium in a heavy skillet. Add onion and sauté until onions soften a little. Add the corn, salmon, tomato, and red pepper. Stir with a wooden spoon a few times, being careful not to break apart the salmon too much.
  • Season with salt and pepper. Stir in the eggs. Add fresh basil. Lower the heat to the lowest setting and cook for 10-12 minutes, or until the eggs are cooked all the way through.
