Use your favorite fruit to top this moist cake.
Ingredients
Dry Ingredients:
- 1/4 cup bean flour
- 1/4 cup rice flour
- 1/2 cup arrowroot
- 1/2 cup potato starch
- 1/2 cup rice bran
- 1/2 tsp xanthan gum
- 2 tsp baking powder
- 1/4 tsp salt
- 2 Tbsp butter or margarine
Wet Ingredients:
- 1 egg
- 1/2 tsp vanilla
- 2 Tbsp milk or water
Fruit Topping:
- 2-3 plums or peaches sliced
- 2 Tbsp sugar + 1 tsp cinnamon
- 2 Tbsp butter or margarine
Instructions
- Combine all dry ingredients with butter, until crumbly.
- Beat in remaining wet ingredients, then pour into a greased cake pan.
- Top with a thick layer of sliced fruit, and sprinkle with cinnamon and sugar.
- Dot the top with bits of butter and bake at 425°F for 25 minutes.
