Plum Cake

Use your favorite fruit to top this moist cake.

Ingredients
  

Dry Ingredients:

  • 1/4 cup bean flour
  • 1/4 cup rice flour
  • 1/2 cup arrowroot
  • 1/2 cup potato starch
  • 1/2 cup rice bran
  • 1/2 tsp xanthan gum
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp butter or margarine

Wet Ingredients:

  • 1 egg
  • 1/2 tsp vanilla
  • 2 Tbsp milk or water

Fruit Topping:

  • 2-3 plums or peaches sliced
  • 2 Tbsp sugar + 1 tsp cinnamon
  • 2 Tbsp butter or margarine

Instructions
 

  • Combine all dry ingredients with butter, until crumbly.
  • Beat in remaining wet ingredients, then pour into a greased cake pan.
  • Top with a thick layer of sliced fruit, and sprinkle with cinnamon and sugar.
  • Dot the top with bits of butter and bake at 425°F for 25 minutes.
