Crunchy Caramel Bars
  • ¾ cup butter or margarine, softened
  • ¼ cup peanut butter
  • 1 cup packed brown sugar
  • 1 tsp baking soda
  • 2 cups GF cornflakes
  • 1 cups GF flour mix
  • 1 egg
  • 300 mL (1 can) sweetened condensed milk
  • 4 cups chopped GF candy bars (nougat bars, chocolate wafers, or peanut butter cups)
  1. Combine butter and peanut butter. Add sugar and baking soda, beat well. Then stir in cornflakes and flour.
  2. Reserve 1¾ cups of this crumb mixture.
  3. Stir egg into remaining mixture then pour into a parchment lined baking sheet, pressing firmly to create a crust. Bake at 350ºF for 15 minutes.
  4. Combine reserved crust mixture and chopped candy bars, set aside.
  5. Spread the sweetened condensed milk over the baked crust, then sprinkle the candy bar mixture on top. Bake 25 minutes or until golden.
  6. Cool, then cut into bars.
