Mushroom-Crusted Meatloaf

Unlike most meatloafs that use breadcrumbs, it's the mashed potatoes that hold this meatloaf together.
  • 1 lb lean ground beef
  • 2 Tbsp onion, diced
  • 1 tsp salt
  • 1 cooked potato, mashed
  • 1 egg
  • ½ tsp garlic powder
  • ½ lb mushrooms, sliced
  1. In a medium mixing bowl, combine all of the ingredients except mushrooms, mixing with your hands.
  2. Form into a loaf shape, and place in a greased loaf pan, then press mushrooms into the top of the loaf. Drizzle the mushrooms with a bit of oil and some extra salt and pepper, then bake at 350°F for 1 hour.
