Unlike most meatloaf’s that use breadcrumbs, it’s the mashed potatoes that hold this meatloaf together.

Mushroom-Crusted Meatloaf
Unlike most meatloafs that use breadcrumbs, it's the mashed potatoes that hold this meatloaf together.
Ingredients
- 1 lb lean ground beef
- 2 Tbsp onion diced
- 1 tsp salt
- 1 cooked potato mashed
- 1 egg
- 1/2 tsp garlic powder
- 1/2 lb mushrooms sliced
Instructions
- In a medium mixing bowl, combine all of the ingredients except mushrooms, mixing with your hands.
- Form into a loaf shape, and place in a greased loaf pan, then press mushrooms into the top of the loaf. Drizzle the mushrooms with a bit of oil and some extra salt and pepper, then bake at 350°F for 1 hour.
