Mango, Tomato & Avocado Salad
Mango gives this salad a bit of sweetness that balances the sharp flavor of the vinaigrette and onions perfectly.
Whisk together the dressing ingredients together and set aside. In large bowl add mango, tomato and onions, then pour dressing over it. Cover and refrigerate for 1-4 hours. Just before serving, stir in avocado and divide into four portions and serve on a bed of lettuce.

Mango, Tomato & Avocado Salad
Ingredients
- 1 mango cut into cubes
- 1 to mato cut into cubes
- 1/3 cup red onion thinly sliced
- 1/2 avocado cut into cubes
- Boston Bib or Butter Lettuce leaves
Vinaigrette
- 2 Tbsp fresh cilantro chopped
- 2 Tbsp olive oil
- 1 Tbsp white wine vinegar
- 1 Tbsp lemon juice
- 1 clove garlic minced
- 1/4 tsp salt
- 1/8 tsp pepper
