Pomegranate & Pineapple Fruit Salad
If you freeze pomegranate seeds when they are in season, you can enjoy their sweet-tart flavors any time of the year. This Pomegranate & Pineapple Fruit Salad is perfect for breakfast, a snack, or even as a light dessert after a filling supper.
Dice pineapple, then combine remaining ingredients in a bowl and toss to combine.
For a beautiful presentation, use a scooped out pineapple to serve the salad in.

Ingredients
- 2 cups fresh pineapple diced
- ½ cup pomegranate seeds
- 1 tsp lime juice
- 1 tsp lime zest
- ½ tsp fresh ginger minced (optional)

At the grocery store today I looked at two fresh fruit items I so wanted to buy. Just didn’t have any idea what I would use them for. A golden pineapple and fresh pomegranates. Darn wish I had bought them both. Think this will be on our Thanksgiving table.
