Mango, Tomato & Avocado Salad

Mango gives this salad a bit of sweetness that balances the sharp flavor of the vinaigrette and onions perfectly.

Ingredients
  

  • 1 mango cut into cubes
  • 1 to mato cut into cubes
  • 1/3 cup red onion thinly sliced
  • 1/2 avocado cut into cubes
  • Boston Bib or Butter Lettuce leaves

Vinaigrette

  • 2 Tbsp fresh cilantro chopped
  • 2 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • 1 Tbsp lemon juice
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions
 

  • Whisk together the dressing ingredients together and set aside.
  • In large bowl add mango, tomato and onions, then pour dressing over it. Cover and refrigerate for 1-4 hours.
  • Just before serving, stir in avocado and divide into four portions and serve on a bed of lettuce.
