Cottage cheese gives this recipe a light sour taste to complimate the blueberries.
Ingredients
- 4 eggs
- 1 1/2 cups cottage cheese
- 1 cup blueberries
- 1/2 cup potato starch
- 1/4 cup sugar
- 1 tsp vanilla
Instructions
- Blend cottage cheese, eggs, potato starch, sugar and vanilla into food processor.
- Fold in the blueberries, then drop onto a lightly greased griddle.
