Blueberry Pancakes

Cottage cheese gives this recipe a light sour taste to complimate the blueberries.

Ingredients
  

  • 4 eggs
  • 1 1/2 cups cottage cheese
  • 1 cup blueberries
  • 1/2 cup potato starch
  • 1/4 cup sugar
  • 1 tsp vanilla

Instructions
 

  • Blend cottage cheese, eggs, potato starch, sugar and vanilla into food processor.
  • Fold in the blueberries, then drop onto a lightly greased griddle.
