Boost the flavor of corn by simply wrapping a strip of bacon around it. Then let the BBQ (or oven) do all the work for you!
P.S. If corn isn’t for you, try this same method with a small bundle (4-5 stalks) of fresh asparagus!
Wrap 1 -2 slices of bacon around each cob, and sprinkle with pepper. Wrap tightly with foil and place in BBQ and oven for about 20 minutes, or until bacon is fully cooked. For the last few minutes of cooking, open the foil and allow the tops to crisp up.
- 4 corn on the cob
- 4-8 slices GF bacon
- Wrap 1 -2 slices of bacon around each cob, and place in foil. Sprinkle with pepper and seal foil around cob.
- Grill or bake until tender (20 minutes). For last 10 minutes of cooking, open foil and broil top to allow bacon to crisp up, turning once.
