Purple cabbage, onion, apple and bacon create a colorful and tasty sweet and sour side dish for pork
Hot Purple Cabbage
- 6 slices GF bacon
- 4 Tbsp bacon drippings
- 1 head purple cabbage shredded
- 1 onion diced
- 1 apple diced & unpeeled
- 1/2 tsp nutmeg
- 1 tsp salt
- 6 cloves
- 3 Tbsp white vinegar
- 3 Tbsp brown sugar
- Cook 6 slices bacon to a crisp, drain on paper towel. Keep 4 tablespoons of the bacon drippings and add cabbage, onion and apple and cook on medium heat.
- Add seasonings and cook slowly to form juices. Watch closely as not to burn. When cabbage is tender, add sugar and vinegar and cook 30 minutes.
