Tart apples make this pancake recipe a wonderful breakfast idea. Add a little cinnamon if you wish!
Ingredients
- 1 1/4 cups rice flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/4 cup buttermilk or milk alternative
- 2 eggs
- 1/4 cup olive oil
- 1 tart apple shredded
Instructions
- In large bowl mix together all dry ingredients.
- In a separate bowl mix together the buttermilk, oil and eggs.
- Pour the wet ingredients into the dry ingredients and mix until combined. Fold in shredded apples. The buttermilk will stop the apples from turning brown.
- Pour 1/4 cup of the pancake batter onto hot griddle. Flip when bubbles appear on top.
Notes
To Make Buttermilk: put 1 Tbsp vinegar into measuring cup and add whole milk (or milk alternative) to bring to 1 1/4 cups - let stand 5 minutes.
