In a separate bowl mix together the buttermilk, oil and eggs.
Pour the wet ingredients into the dry ingredients and mix until combined. Fold in shredded apples. The buttermilk will stop the apples from turning brown.
Pour 1/4 cup of the pancake batter onto hot griddle. Flip when bubbles appear on top.
Notes
To Make Buttermilk: put 1 Tbsp vinegar into measuring cup and add whole milk (or milk alternative) to bring to 1 1/4 cups - let stand 5 minutes.
