My favorite thing about this recipe is you can wrap it and take it with you, and its great warm or cold.
Oatmeal-Coconut Breakfast Bake
- 3 1/2 cups GF oats or quick oats not instant
- 2 tsp baking powder
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup brown sugar
- 1/2 cup coconut
- 1/2 cup raisins
- 1/4 cup oil
- 2 eggs
- 1 cup milk or milk alternative
- Mix ingredients in order given and pour into greased 8x8 pan, and bake at 350°F for about 30 minutes.
- Serve warm with milk and brown sugar, and fresh in season berries.
