Accordion Potatoes
A good presentation, when it comes to food seems to make the food taste even better. Maybe its because your brain already likes the food, even before your taste buds have tried it.
Whatever the reason, this is a unique way to serve potatoes – and it does taste as great as it looks!

Accordion Potatoes
Ingredients
- 4 large russet potatoes
- 2 Tbsp oil
- 1/2 cup shallots sliced
- 2 tsp thyme
- Salt and pepper
Instructions
- Using a mandolin, thinly slice (1/8-1/4" thick) potatoes lengthwise, keeping the slices in order.
- Grease a small rectangular baking dish (or use some loaf pans), and place potatoes upright into dish, slice after slice.
- Randomly slide in shallot slices in between potato slices. Drizzle with oil, sprinkle with salt, pepper and thyme.
- Bake uncovered on the middle rack, at 375°F for about 1 hour. If needed, place until broiler for a few minutes until tops are browned.
