Accordion Potatoes

Not your same boring potatoes this time. Here is a unique way to prepare potatoes, that taste as good as it looks.

- 4 large russet potatoes
- 2 Tbsp oil
- 1/2 cup shallots sliced
- 2 tsp thyme
- Salt and pepper
Using a mandolin, thinly slice (1/8-1/4" thick) potatoes lengthwise, keeping the slices in order.
Grease a small rectangular baking dish (or use some loaf pans), and place potatoes upright into dish, slice after slice.
Randomly slide in shallot slices in between potato slices. Drizzle with oil, sprinkle with salt, pepper and thyme.
Bake uncovered on the middle rack, at 375°F for about 1 hour. If needed, place until broiler for a few minutes until tops are browned.
