Accordion Potatoes

Not your same boring potatoes this time. Here is a unique way to prepare potatoes, that taste as good as it looks.

Ingredients
  

  • 4 large russet potatoes
  • 2 Tbsp oil
  • 1/2 cup shallots sliced
  • 2 tsp thyme
  • Salt and pepper

Instructions
 

  • Using a mandolin, thinly slice (1/8-1/4" thick) potatoes lengthwise, keeping the slices in order.
  • Grease a small rectangular baking dish (or use some loaf pans), and place potatoes upright into dish, slice after slice.
  • Randomly slide in shallot slices in between potato slices. Drizzle with oil, sprinkle with salt, pepper and thyme.
  • Bake uncovered on the middle rack, at 375°F for about 1 hour. If needed, place until broiler for a few minutes until tops are browned.
