Orange juice gives this a light citrus taste.
Ingredients
  • 2 stalks celery, finely chopped (leaves included)
  • 1 small onion, finely chopped
  • 1¼ cups orange juice
  • 1 cup rice
  • ¾ cups water
  • 3 Tbsp oil
  • 1 tsp salt
  • ½ tsp thyme
Instructions
  1. In hot oil, sauté the onion and celery until they become soft. Add the orange juice and water and bring to a boil.
  2. Add the remaining ingredients, cover and simmer for about 20 minutes or until all the liquid is evaporated.
