Orange juice gives this a light citrus taste.
Ingredients
- 2 stalks celery finely chopped (leaves included)
- 1 small onion finely chopped
- 1 1/4 cups orange juice
- 1 cup rice
- 3/4 cups water
- 3 Tbsp oil
- 1 tsp salt
- 1/2 tsp thyme
Instructions
- In hot oil, sauté the onion and celery until they become soft. Add the orange juice and water and bring to a boil.
- Add the remaining ingredients, cover and simmer for about 20 minutes or until all the liquid is evaporated.
