Ingredients
  

  • 1 zucchini about 12 inches long or 6 medium ones
  • 3 Tbsp olive oil
  • 1/2 cup onion chopped
  • 3 cloves garlic minced
  • 1 lb ground turkey
  • 2 to matoes diced
  • 3 Tbsp fresh basil chopped
  • 1 tsp fresh rosemary chopped
  • 3/4 cup Parmesan cheese grated
  • 1 egg lightly beaten
  • 2 tsp salt
  • 2 tsp pepper

Instructions
 

  • Cut zucchini in half lengthwise. Scoop out insides, leaving shells about 1/4 inch thick. Reserve about half of the insides.
  • Heat 2 Tbsp of olive oil in a skillet on medium high heat, and sauté onion and garlic until soft. Add reserved zucchini insides, and cook another 2 minutes. Set aside.
  • Fry turkey until fully cooked (drain any fat), then stir in the onion mixture. Stir in tomatoes, basil and rosemary and cook 1 minute longer. Remove from heat and set aside.
  • When mixture has cooled, add cheese, egg, salt and pepper.
  • Fill zucchini shells with mixture, and place in a baking dish with 1/4 inch of water in the bottom of the pan. Bake at 375°F for 40 minutes, until golden brown.

Notes

Can add any other veggies you like - corn, peppers, etc.
