Smoky Gruyere-Stuffed Chicken

Stuffed chicken marinated in white wine, then baked until rich and golden.

Ingredients
  

  • 2 chicken breast
  • 4 Tbsp GF Stilton cheese or Gruyere cheese
  • 2 slice GF bacon chopped
  • 1 cup white wine

Instructions
 

  • With a paring knife, cut a 1-inch-long slit in thick side of breast. Insert knife, and without enlarging opening, carefully work around inside to form a pocket (make sure you do not go through the other side).
  • Into each breast, place 2 Tbsp cheese and 1 slice of bacon, close pocket using 2 to 3 toothpicks. Then place in a plastic zipper lock bag, and pour enough wine to cover chicken at let marinate for 2-4 hours in fridge.
  • Place on a foil lined baking sheet, rub with olive oil and season with salt and pepper and bake at 400°F until done - approx. 30 to 35 minutes.
