Rice adds texture, firmness, flavor, and a prickly porcupine look!
Ingredients
  • 2 eggs, beaten
  • 1½ lbs ground beef
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 cup cooked rice
  • 1 cup celery, chopped
  • ¼ cup tomato paste
  • ¼ cup GF ketchup
  • ¾ tsp salt
  • ½ tsp dried rosemary
  • ½ tsp dried thyme
  • ⅛ tsp pepper
Instructions
  1. Mix all ingredients thoroughly and press into a loaf pan or a 9x13 pan or 2 loaf pans. Brush top with some extra ketchup.
  2. Bake at 350°F for 1 to 1¼ hours.
