Porcupine Meatloaf

Porcupine Meatloaf
Rice adds texture, firmness, flavor, and a prickly porcupine look!
Ingredients
- 2 eggs beaten
- 1 1/2 lbs ground beef
- 1 onion finely chopped
- 1 clove garlic minced
- 1 cup cooked rice
- 1 cup celery chopped
- 1/4 cup tomato paste
- 1/4 cup GF ketchup
- 3/4 tsp salt
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/8 tsp pepper
Instructions
- Mix all ingredients thoroughly and press into a loaf pan or a 9x13 pan or 2 loaf pans. Brush top with some extra ketchup.
- Bake at 350°F for 1 to 1 1/4 hours.
