Porcupine Meatloaf

Ingredients
  

  • 2 eggs beaten
  • 1 1/2 lbs ground beef
  • 1 onion finely chopped
  • 1 clove garlic minced
  • 1 cup cooked rice
  • 1 cup celery chopped
  • 1/4 cup tomato paste
  • 1/4 cup GF ketchup
  • 3/4 tsp salt
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/8 tsp pepper

Instructions
 

  • Mix all ingredients thoroughly and press into a loaf pan or a 9x13 pan or 2 loaf pans. Brush top with some extra ketchup.
  • Bake at 350°F for 1 to 1 1/4 hours.
