Mango Mint Prawns

  • 1 kg 2 lb prawns, peeled & de-veined
  • 3 mangoes
  • 2 3/4 cups apricot juice
  • 1 1/2 Tbsp fresh mint chopped


  • In a food processor, blend the mangoes, juice and mint.
  • Pour into a microwave-safe dish and microwave on HIGH for three minutes.
  • Grill prawns, then serve with mango dip.
