Great on the grill!
Mango Mint Prawns
- 1 kg 2 lb prawns, peeled & de-veined
- 3 mangoes
- 2 3/4 cups apricot juice
- 1 1/2 Tbsp fresh mint chopped
- In a food processor, blend the mangoes, juice and mint.
- Pour into a microwave-safe dish and microwave on HIGH for three minutes.
- Grill prawns, then serve with mango dip.
