Roasted Red Pepper & Spinach Dip
Serve this tasty dip in a bread bowl for a great looking appy (I have a quick trick for creating a perfectly shaped bread bowl…use a metal bowl to bake the bread in!).
Mix up your favorite gluten free bread, and let rise in a warm place. I used a dome shaped baking pan to create my bread bowl.
After pulsing spinach a few times in the food processor, place the remaining ingredients into a food processor and pulse until smooth. Stir the spinach and cheese mixture together and fill inside a hollowed out bread.

Roasted Red Pepper & Spinach Dip
Ingredients
- 3-6 cups baby spinach
- 540 ml can white kidney beans rinse & drained
- 2 whole roasted red peppers
- 1 cup cream cheese or sour cream for a thinner dip
- 3 Tbsp lemon juice
- Zest from 1 lemon or less to taste
- 3/4 tsp paprika
- Salt and pepper to taste
Instructions
- In a food processor, pulse spinach until coarsely chopped. Place into a bowl.
- Into the food processor add the remaining ingredients, and blend until smooth. Pour into bowl with spinach and stir to combine. Chill until ready to use.
- Serve in a gluten free bread bowl, or with corn chips.
Notes
Do you have a way to make this dip WITHOUT dairy? Dairy cheeses reportedly contain an opiate (caseinophines), which is the reason people love cheese but also the reason I want to eat dairy-free. Would appreciate any suggestions you have. Thank you.
Full fat canned coconut milk, or silken tofu could be used in place of the cream cheese. Just use a mixer to cream it into a smooth consistency before you add it to the rest of the ingredients. Let me know how it turns out!
How about a raw cashew cream in place of the cream cheese? Some people want to avoid soy also and coconut milk may impart unwanted flavor.

Thank you for all recipe glueten free food. I has been on glueten free food is almost a year now I feel great I can see 100/: with my body. I also make my own glueten free oatmeal cookies it so delicious.
