By just changing a few ingredients to plain coleslaw, you turn it into a whole new dish with delicious and unexpected flavors.
Lemon Caper Coleslaw
- 4 cups fresh broccoli-slaw mix or coleslaw mix
- ¼ cup fresh Italian parsley chopped
- 1 Tbsp lemon zest
- 2 Tbsp capers drained
- 1/3 cup buttermilk or alternative*
- 1/3 cup GF mayonnaise
- 3 Tbsp lemon juice
- Salt and pepper to taste
- Whisk together all dressing ingredients until smooth then toss with remaining salad ingredients.
