Ingredients
  

  • 4 cups fresh broccoli-slaw mix or coleslaw mix
  • ¼ cup fresh Italian parsley chopped
  • 1 Tbsp lemon zest
  • 2 Tbsp capers drained

Dressing

  • 1/3 cup buttermilk or alternative*
  • 1/3 cup GF mayonnaise
  • 3 Tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Whisk together all dressing ingredients until smooth then toss with remaining salad ingredients.

Notes

*Add 1/2 tsp of white vinegar to a milk alternative and let sit for 5 minutes.

    Where can I find a good tasting, gluten free mayo? The only mayos in my area are the usual regular and light. I tried a “gluten free” mayo when I was traveling, and it was AWFUL! I don’t remember what brand it was, but I wouldn’t buy it for myself.
    This recipe is delicious! I used plain Greek yogurt in place of the mayo.
