Creamy and smooth with a mild mustard taste.
Ingredients
  • 2 Tbsp red wine vinegar
  • 1 Tbsp GF Dijon mustard
  • 1 Tbsp shallots, minced
  • ¼ tsp dried thyme
  • 1 clove garlic
  • ⅓ cup olive oil
  • Salt and pepper, to taste
Instructions
  1. In a blender or food processor, combine all ingredients except the oil, process until smooth.
  2. While the machine is running, slowly pour in the oil in a thin stream.
Notes
Sauté shallots first until sweet and caramelized, then add into mixture for a richer and smoother taste.
Makes about 1 cup
