Green Beans with Bacon Dressing
In our Green Beans with Bacon Dressing, just a bit of bacon is all you need to add a ton of flavor. It’s taste and texture adds complexity to an otherwise simple veggie. In this recipe we’ve used green beans, but if prefer substitute in any other veggie you like (Brussels sprouts, broccoli, cauliflower, or try bok choy).
Boil beans until tender-crisp, about 5 minutes. Fry bacon under crispy. Set aside and drain. Fry shallots until golden, stir in vinegar and add in beans and parsley. Sauté for a few minutes and season to taste with salt and pepper.
