Green Beans with Bacon Dressing

Bacon adds a wonderful flavor to simple green beans.

Total Time 20 mins
- 1 lb green or wax beans trimmed
- 3 slices GF bacon finely chopped
- 1 shallot chopped (or onion)
- 2 Tbsp cider vinegar or GF balsamic vinegar
- 1 Tbsp parsley
- Salt & pepper to taste
Boil beans until tender-crisp, about 5 minutes.
Meanwhile, cook bacon under crispy. Set aside.
Cook shallots until golden, stir in vinegar and add in beans and parsley. Sauté for a few minutes and season to taste with salt and pepper.
