Green Beans with Bacon Dressing

Bacon adds a wonderful flavor to simple green beans.

Ingredients
  

  • 1 lb green or wax beans trimmed
  • 3 slices GF bacon finely chopped
  • 1 shallot chopped (or onion)
  • 2 Tbsp cider vinegar or GF balsamic vinegar
  • 1 Tbsp parsley
  • Salt & pepper to taste

Instructions
 

  • Boil beans until tender-crisp, about 5 minutes.
  • Meanwhile, cook bacon under crispy. Set aside.
  • Cook shallots until golden, stir in vinegar and add in beans and parsley. Sauté for a few minutes and season to taste with salt and pepper.
