Ingredients
  • 14oz flaked coconut
  • 14oz can sweetened condensed milk
  • 2 tsp vanilla
  • 1½ tsp almond extract, optional
  • 2 egg whites
  • ¼ tsp salt
Instructions
  1. In large mixing bowl, combine coconut, sweetened condensed milk, and extracts.
  2. In another bowl beat the eggs whites and salt until stiff peaks form. Gently fold into the coconut mixture.
  3. Use a small cookie scoop or drop by tablespoonful's onto a parchment paper lined baking sheet, and bake at 325°F for about 20 minutes or until lightly browned around the edges.
