  • 1 egg white
  • 1/8 tsp cream of tartar
  • 2 Tbsp sugar
  • 1/4 tsp vanilla
  • 1 Tbsp cocoa
  • 1/2 tsp instant coffee granules or espresso powder


  • Beat egg white and cream of tartar with a mixer at high speed until soft peaks form, while gradually adding sugar.
  • Stir in the remaining ingredients.
  • Drop mixture by tablespoonful onto lined baking sheet, and bake at 250°F for 40 minutes, or until firm. Turn off oven, and let meringues cool in oven for 1 hour.
