Rich cocoa and coffee flavour.
- 1 egg white
- 1/8 tsp cream of tartar
- 2 Tbsp sugar
- 1/4 tsp vanilla
- 1 Tbsp cocoa
- 1/2 tsp instant coffee granules or espresso powder
- Beat egg white and cream of tartar with a mixer at high speed until soft peaks form, while gradually adding sugar.
- Stir in the remaining ingredients.
- Drop mixture by tablespoonful onto lined baking sheet, and bake at 250°F for 40 minutes, or until firm. Turn off oven, and let meringues cool in oven for 1 hour.
