These wafers make for a light and crispy snack.
Ingredients
  • ¼ cup butter or margarine
  • ¼ cup sugar
  • 1 egg, beaten
  • Zest from 1 lemon
  • ¾ cup rice flour
Instructions
  1. Whip the sugar and butter together then blend in the egg and zest. Stir in the flour until well blended into a firm dough.
  2. Sprinkle some rice flour on a sheet or waxed paper, then roll out the dough. Use your favorite shape to cut the dough into wafers then place on a cookie sheet and cook for 7-10 minutes.
