A great way to use left over potatoes.
Brazilian Potato Biscuits
- 1 potato peeled, cooked & mashed
- 1 egg yolk
- 4 Tbsp rice flour
- 2/3 cup cornstarch
- 1/4 cup butter or margarine
- 1 tsp baking powder
- 1 tsp salt
- Mix all ingredients together until a dough forms (add more cornstarch if necessary).
- Roll out dough and cut out into biscuits.
- Place on lightly greased cookie sheet and bake at 350° for 20 minutes or until lightly brown.
