This simple dressing is an amazing combination of flavors, and pairs perfectly when drizzled over peppery-flavored baby arugula.
Remove the pits from the dates and puree everything in the blender until smooth.
Most dressings require the oil to be slowly drizzled in while the machine is running to combine the oil and vinegar. But here, the dates and Dijon add enough bulk to the mixture that you can process everything all at once and you’ll still achieve the proper emulsion.
|Citrus-Date Vinaigrette|| |
- 2 dates, pitted (rehydrate if dried)
- ¼ cup olive oil
- ½ tsp orange zest
- ½ tsp lemon zest
- 3 Tbsp fresh lemon juice
- 2 Tbsp fresh orange juice
- 1 Tbsp whole grain Dijon
- Salt and pepper to taste
- In a blender or mini food processor, combine all ingredients until smooth.
