Corn & Avocado Salad

Not your typical salad, but flavors blend great with this corn, tomato, cilantro and avocado salad.

Ingredients
  • 1 - 16 oz. bag frozen corn
  • 1 red onion, diced
  • 2 tomatoes, diced
  • 2 cucumbers, peeled and diced
  • 1 cup green onion, chopped
  • ½ cup cilantro leaves, chopped
  • ½ cup apple cider vinegar
  • 2 Tbsp parsley, chopped
  • 1 tsp garlic powder
  • 2 avocados, diced
  • Salt and pepper to taste
Instructions
  1. Combine all ingredients, except avocado, then chill 30 minutes.
  2. Gently mix in avocado before serving.
