Chocolate Mousse Pie

  • 1 tsp unflavored gelatin
  • 2 Tbsp cold water
  • 1 Tbsp boiling water
  • 1/2 cup sugar
  • 1/4 cup cocoa
  • 1 cup whipped topping chilled
  • 1 tsp vanilla
  • 1 GF crust of your choice


  • Add the gelatin to a small bowl. Mix with two tablespoons of cold water until there are no lumps. Let it sit until it thickens, about one minute. Then add boiling water and stir until the gelatin is dissolved.
  • In a separate mixing bowl that has been refrigerated, add the sugar, cocoa, whipped topping, and vanilla extract. Beat at low speed until the ingredients are combined. Slowly add the gelatin and beat on low until well incorporated.
  • Pour into a pie crust and refrigerate for at least two hours before serving.
