Ingredients
  

Dry Ingredients:

  • 2 cups GF flour mix
  • 2 cups sugar
  • 1 tsp xanthan gum
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 tsp baking soda

Wet Ingredients:

  • 4 eggs
  • 2 cups carrots grated
  • 1 1/2 cups of oil
  • 1 tsp vanilla
  • 1 small can crushed pineapple drained

Instructions
 

  • Mix all the dry ingredients together.
  • In another bowl, whisk eggs until frothy then add remaining wet ingredients and combine. Add the wet ingredient mix to the dry mix and stir until well combined.
  • Pour mix into three 9-inch pans (greased and floured) and bake at 350°F for about 25 minutes or until done.
