Butterscotch Cookies
A smooth creamy caramel cookie.
Ingredients
- 1/2 cup butter or margarine
- 1 pkg 4oz GF butterscotch pudding & pie filling (not instant)
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 cup GF Flour Blend
- 1/2 tsp baking soda
- 3 tsp cinnamon
Instructions
- Cream butter with dry pudding mix and brown sugar, then add egg. Mix well then add remaining ingredients.
- Use a small melon-baller scoop to form cookies, and place on an un-greased cookie sheet. Then flatten each with fingertips.
- Bake at 350°F for 10 minutes.
Notes
If desired, insert 1 chocolate chip or GF butterscotch chip into the top of each cookie.
