  • 1/2 cup butter or margarine
  • 1 pkg 4oz GF butterscotch pudding & pie filling (not instant)
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 cup GF Flour Blend
  • 1/2 tsp baking soda
  • 3 tsp cinnamon


  • Cream butter with dry pudding mix and brown sugar, then add egg. Mix well then add remaining ingredients.
  • Use a small melon-baller scoop to form cookies, and place on an un-greased cookie sheet. Then flatten each with fingertips.
  • Bake at 350°F for 10 minutes.


If desired, insert 1 chocolate chip or GF butterscotch chip into the top of each cookie.
