A smooth creamy caramel cookie.
Ingredients
  • ½ cup butter or margarine
  • 1 pkg (4oz) GF butterscotch pudding & pie filling (not instant)
  • ½ cup brown sugar
  • 1 egg
  • 1½ cup GF Flour Blend
  • ½ tsp baking soda
  • 3 tsp cinnamon
Instructions
  1. Cream butter with dry pudding mix and brown sugar, then add egg. Mix well then add remaining ingredients.
  2. Use a small melon-baller scoop to form cookies, and place on an un-greased cookie sheet. Then flatten each with fingertips.
  3. Bake at 350°F for 10 minutes.
Notes
If desired, insert 1 chocolate chip or GF butterscotch chip into the top of each cookie.
