Ingredients
  

DRY:

  • 1 cup sorghum flour
  • 1/2 cup buckwheat flour
  • 1/4 cup tapioca starch
  • 1 tsp xanthan gum
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1 cup light brown sugar packed

WET:

  • 1 egg
  • 1/2 cup olive oil
  • 1/2 cup applesauce
  • 1/2 cup milk or milk alternative + add 1/4 tsp vinegar
  • 2 Tbsp agave or honey
  • 2 tsp vanilla

ADD-INS:

  • 1 cup apples peeled & chopped
  • 1/2 cup sliced almonds toasted
  • 1 tsp cinnamon
  • 1 Tbsp sugar

ICING:

  • 1/2 cup icing sugar
  • 1 Tbsp milk or milk alternative
  • 1/4 tsp almond extract

Instructions
 

  • In a large mixing bowl, use a whisk to combine your dry ingredients together and set aside.
  • In a smaller bowl combine the wet ingredients and mix well. Then add to the dry ingredients and stir until a smooth batter forms (if you need a tad more liquid add a tablespoon of milk at a time to achieve a smooth- but not too thin- cake batter).
  • Add the apples and toasted slivered almonds (keep some for the top).
  • Scoop the batter into a greased cake pan and smooth evenly. Combine the cinnamon and sugar and sprinkle on top, along with the reserved apples and almonds).
  • Bake at 375F for 35 to 45 minutes until golden around the edges and firm in the center.
  • Mix together the icing ingredients and drizzle over the cooled cake.
