Banana instant pudding mix adds flavor and texture to this tasty loaf or muffins.
Ingredients
DRY INGREDIENTS
  • 1-3.5oz pkg GF banana flavored instant pudding mix
  • ½ tsp salt
  • 1½ tsp baking soda
  • 2 tsp cinnamon
  • 3 cups self-rising GF flour mix
  • 2 cups sugar
  • 1 cup nuts, chopped
WET INGREDIENTS
  • 2 8oz sticks of margarine - melted
  • 1 cup milk or milk alternative
  • 3 eggs
  • 1 Tbsp vanilla
  • 1½ cups mashed overripe banana
  • ½ cup zucchini, grated
Instructions
  1. Mix together all the dry ingredients.
  2. In a separate bowl mix together all the wet ingredients.Combine the two mixes together.
  3. Grease muffin tins or insert with paper liners (or use loaf pan), fill tin and bake at 350°F for 20-30 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
