Banana Zucchini Bread
Banana instant pudding mix adds flavor and texture to this tasty loaf or muffins.
Ingredients
DRY INGREDIENTS
- 1-3.5 oz pkg GF banana flavored instant pudding mix
- 1/2 tsp salt
- 1 1/2 tsp baking soda
- 2 tsp cinnamon
- 3 cups self-rising GF flour mix
- 2 cups sugar
- 1 cup nuts chopped
WET INGREDIENTS
- 2 8 oz sticks of margarine - melted
- 1 cup milk or milk alternative
- 3 eggs
- 1 Tbsp vanilla
- 1 1/2 cups mashed overripe banana
- 1/2 cup zucchini grated
Instructions
- Mix together all the dry ingredients.
- In a separate bowl mix together all the wet ingredients.Combine the two mixes together.
- Grease muffin tins or insert with paper liners (or use loaf pan), fill tin and bake at 350°F for 20-30 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
