Ingredients
  

DRY INGREDIENTS

  • 1-3.5 oz pkg GF banana flavored instant pudding mix
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 3 cups self-rising GF flour mix
  • 2 cups sugar
  • 1 cup nuts chopped

WET INGREDIENTS

  • 2 8 oz sticks of margarine - melted
  • 1 cup milk or milk alternative
  • 3 eggs
  • 1 Tbsp vanilla
  • 1 1/2 cups mashed overripe banana
  • 1/2 cup zucchini grated

Instructions
 

  • Mix together all the dry ingredients.
  • In a separate bowl mix together all the wet ingredients.Combine the two mixes together.
  • Grease muffin tins or insert with paper liners (or use loaf pan), fill tin and bake at 350°F for 20-30 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
