Apple & Carrot Muffins
Loaded with fruits and veggies! Shredded apples, carrots and coconut, with raisins and nuts create this rich and filling muffin.
Apple & Carrot Muffins
Filled with apples, carrots, coconut and walnuts, these muffins will keep you going all day long!
Ingredients
- 1 cup rice flour
- 1/2 cup bean flour
- 2 1/2 tsp baking powder
- 1 1/4 cups sugar
- 1 1/2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 4 eggs beaten
- 1/2 cup oil
- 2 tsp vanilla
- 2 cups carrot grated
- 1 cup apple shredded
- 1/2 cup raisins
- 1/2 cup walnuts chopped
- 1/3 cup shredded coconut
Instructions
- Mix together the first 7 dry ingredients in a large bowl.
- In a separate bowl combine the eggs, oil and vanilla. Stir in the carrots, apples, raisins, walnuts and coconut until well combined.
- Add this mixture to the dry ingredients and mix until thoroughly combined.
- Pour batter 3/4 full into greased/paper lined muffin tins, and bake at 350°F for 20-25 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
