Filled with apples, carrots, coconut and walnuts, these muffins will keep you going all day long!
Ingredients
  • 1 cup rice flour
  • ½ cup bean flour
  • 2½ tsp baking powder
  • 1¼ cups sugar
  • 1½ tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • 4 eggs beaten
  • ½ cup oil
  • 2 tsp vanilla
  • 2 cups carrot, grated
  • 1 cup apple, shredded
  • ½ cup raisins
  • ½ cup walnuts, chopped
  • ⅓ cup shredded coconut
Instructions
  1. Mix together the first 7 dry ingredients in a large bowl.
  2. In a separate bowl combine the eggs, oil and vanilla. Stir in the carrots, apples, raisins, walnuts and coconut until well combined.
  3. Add this mixture to the dry ingredients and mix until thoroughly combined.
  4. Pour batter ¾ full into greased/paper lined muffin tins, and bake at 350°F for 20-25 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
