Ingredients
  

  • 1 cup rice flour
  • 1/2 cup bean flour
  • 2 1/2 tsp baking powder
  • 1 1/4 cups sugar
  • 1 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 eggs beaten
  • 1/2 cup oil
  • 2 tsp vanilla
  • 2 cups carrot grated
  • 1 cup apple shredded
  • 1/2 cup raisins
  • 1/2 cup walnuts chopped
  • 1/3 cup shredded coconut

Instructions
 

  • Mix together the first 7 dry ingredients in a large bowl.
  • In a separate bowl combine the eggs, oil and vanilla. Stir in the carrots, apples, raisins, walnuts and coconut until well combined.
  • Add this mixture to the dry ingredients and mix until thoroughly combined.
  • Pour batter 3/4 full into greased/paper lined muffin tins, and bake at 350°F for 20-25 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
