Use this basic muffin recipe and add whatever flavors you like – orange zest & cranberries, chocolate chips & espresso powder, or coconut and lemon zest.

A simple and very tasty muffin.
- ¼ cup molasses
- 1 tsp baking soda
- ½ cup brown sugar
- ¼ cup margarine or butter
- 2 eggs
- 1 cup buttermilk
- ⅓ cup rice bran
- 1⅓ cups rice flour
- Combine the molasses with the soda until it has a foamy appearance. Set aside.
- In another bowl, cream the sugar and butter then add in the eggs and buttermilk until mixed thoroughly. Then add the molasses mixture and mix well.
- Finally add the rice bran and flour and blend until combined. Then pour into paper lined/greased muffin tins and bake at 375°F for 30 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
