Buttermilk Muffins

Use this basic muffin recipe and add whatever flavors you like – orange zest & cranberries, chocolate chips & espresso powder, or coconut and lemon zest.

Buttermilk Muffins

A simple and very tasty muffin.

  • 1/4 cup molasses
  • 1 tsp baking soda
  • 1/2 cup brown sugar
  • 1/4 cup margarine or butter
  • 2 eggs
  • 1 cup buttermilk
  • 1/3 cup rice bran
  • 1 1/3 cups rice flour


  • Combine the molasses with the soda until it has a foamy appearance. Set aside.
  • In another bowl, cream the sugar and butter then add in the eggs and buttermilk until mixed thoroughly. Then add the molasses mixture and mix well.
  • Finally add the rice bran and flour and blend until combined. Then pour into paper lined/greased muffin tins and bake at 375°F for 30 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
