Nuts add extra flavor and crunch to this banana bread. You can use any nut you like. However, the two favorites are walnuts and pecans.

Ingredients
  

  • 1 cup mashed overripe bananas
  • 1 tsp vanilla
  • 3/4 cup sugar
  • 2 eggs
  • 1/4 cup nuts chopped
  • 1 1/4 cups rice flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 1/4 cup olive oil

Instructions
 

  • Add the bananas, sugar, and vanilla to a medium bowl. Mix together at medium speed for one minute. Add the two eggs one at a time and mix until well combined, about thirty seconds.
  • In a separate bowl, mix together the nuts, rice flour, baking soda, salt, and baking powder. Using a wooden spoon, stir the dry ingredients into the wet ingredients until the batter is well combined and moist. Add the oil and mix on low speed until everything is well incorporated.
  • Pour batter into a greased loaf pan, and bake at 350°F for 40-50 minutes, or until internal temperature of loaf reaches 205°F, using an instant read thermometer.
