I love these muffins and they don’t cost me a fortune to make buying lots of specialized ingredients! You’ll likely have most of the ingredients on hand.
- 2 eggs
- 1 cup liquid water, fruit, juice, milk, milk alternative
- 4 Tbsp sugar
- 4 Tbsp vegetable oil
- 2 cup white rice flour
- 4 tsp baking powder
- 1 tsp salt
- Raspberry jam
- Combine all ingredients, except jam in a bowl and mix completely. Pour a greased/paper lined muffin tin.
- Press a tablespoon full of jam into the top of the muffins. Bake at 425°F for 15 - 18 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
