Jam-Filled Muffins

I love these muffins and they don’t cost me a fortune to make buying lots of specialized ingredients! You’ll likely have most of the ingredients on hand.

I love these muffins and they don't cost me a fortune to make buying lots of specialized ingredients! You'll likely have most of the ingredients on hand.
Ingredients
  • 2 eggs
  • 1 cup liquid (water, fruit, juice, milk, milk alternative)
  • 4 Tbsp sugar
  • 4 Tbsp vegetable oil
  • 2 cup white rice flour
  • 4 tsp baking powder
  • 1 tsp salt
  • Raspberry jam
Instructions
  1. Combine all ingredients, except jam in a bowl and mix completely. Pour a greased/paper lined muffin tin.
  2. Press a tablespoon full of jam into the top of the muffins. Bake at 425°F for 15 - 18 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
